Christine's Carrot CakeÂ
1-1/2 cups sugar
1 cup apple sauce
4 eggs
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
2 cups
flour
2 cups grated carrots
1/2 cup golden raisins

Preheat oven to 350 degrees.
Blend the sugar, apple sauce and eggs together.
Add the salt, baking soda, baking powder and cinnamon.
Add the flour and mix well.
Add the carrots and raisins and mix until incorporated.
Â
Spray a bundt pan with cooking spray or butter. Â Add batter.
Bake for 50 minutes or until a toothpick comes out clean.

Cream Cheese Frosting
1 stick butter, softened
8 oz. cream cheese, softened
1 pound confectioners sugar
2 teaspoons vanilla (or vanilla paste)
Â
Cream butter and cream cheese together.
Add sugar and vanilla.Â
Mix until creamy and to the consistency you like. Â You can add a few drops of milk or cream to loosen (or add more sugar to thicken).
