Thank you to all those who have dropped off or mailed cards for our Brigham & Women's Hospital Nurses. You are awesome!!!!!! So far, I have over 225 cards ready for delivery and I know there are more on their way. It's not too late to make cheerful cards for Boston nurses. I will be collecting them over the next few weeks and get them to Michelle, who is
spearheading this important happy card mission. Please write a message and place your card in an envelope. Michelle will distribute the cards to the charge nurses of each department. My 17 year old daughter, who is artistic and really missing school, has been trying to pass the time creatively. She has done paint alongs with Bob Ross & her friends, baked many yummy recipes and has been painting rocks. In case you have some rocks and paint around your house, they make
great gifts. She gave cactus plants as Christmas gifts last year.
Here is one of her favorite cookies to make with minimal ingredients:
Coconut Macaroons
Preheat oven to 350 degrees. Line baking sheet with parchment paper, or coat very generously with nonstick cooking spray. Whisk together 3 large egg whites, 1/2 cup sugar and 1/4 tsp salt until frothy. With a fork, stir 14 ounces (1 pkg) sweetened flaked coconut (5 1/3 cups) until moistened. Drop tablespoon size dough onto prepared baking sheets
(no spreading). Bake until lightly golden, about 11-13 minutes, depending on your oven and size. (I like to dip these cooled macaroons into melted chocolate).
